Abstract
Jaggery, popularly known as "Gur," is one of the oldest traditional sweeteners produced from sugarcane and palm sap. The jaggery industry plays a significant role in the rural economy of India by generating employment, supporting small-scale enterprises, and adding value to agricultural produce. In recent years, the industry has undergone substantial changes due to technological advancements, increasing health consciousness among consumers, growing export demand, and government support for food processing industries. The emergence of organic jaggery, jaggery powder, jaggery cubes, chemical-free production methods, modern processing technologies, and sustainable manufacturing practices has transformed the traditional jaggery sector into a rapidly growing agro-processing industry. This paper examines the recent trends in jaggery production industries, analyzes opportunities and challenges, and discusses future prospects for sustainable growth.
